Chili: Versatile and Delicious
During college I discovered my love for cooking and lucky for me, I got to try my recipes out on my friends. I rarely cooked for just myself; when I cooked a meal I often fed at least 4 others. So leftovers weren’t an issue. When I was living alone, I still loved to cook, and that caused a major issue. What to do with the food left in the fridge after a few days?
Now, the freezer has become my best friend. When I cook something for myself I plan to freeze at least half it.
One of my favorite meals is chili and it has so many easy applications. If your family loves chili, it makes for a quick meal during those crazy days.
A tip is to always freeze soup, chili or sauce in 1 cup quantities in baggies. They’re easy to unthaw quickly. Today, my favorite recipe is Chili Cheese Nachos and it is a perfect meal for a quick, delicious dinner.
Chili Cheese Nachos
Ingredients:
Frozen chili
Cheese (the more the better)
Chips
Sour cream (optional)
You always have to unthaw your chili and it’s always best to do it plenty early. I like to take my 1 cup of frozen chili out of the freezer in the early morning; it will unthaw slowly all day and be ready for dinner.
Like I promised, these nachos are easy to make. First, layer your chips on the plate and of course, cheese is very important. Why put one kind of cheese on when you could use two kinds? Remember, more is always better.
After you have the cheese all taken care of, you need to heat up your thawed chili in the microwave. When it’s warm, pour it on your cheese and chips. Then, put it into your oven for a few minutes. You want to keep a close eye on the chips because you just want to melt the cheese and warm up the chips.
Get creative and don’t be afraid to use that chili in your freezer. You can freeze all kinds of sauces that will make for quick and easy dinners! Just because you’re single and living alone doesn’t mean you have to sacrifice delicious food.
