So I love buying whole chickens. Living out in the country it is easy for me to buy them from a local FFA Chapter, family or a friend. They are so affordable for the amount of meat you get and you can get so much out of them. If you have a 6 qt or larger slow cooker you can basically cook it without even being there. I call that a huge win-win for this busy lady.
I had one last chicken to cook before we got in a new batch from my in-laws. My ingredients were sorely lacking since my kitchen is tore apart right now. So, what do you do? You don’t want bland, plain chicken, but you don’t have very many options for making it flavorful and juicy.

Seriously though, this rub was so easy to make and it smelled so delicious while it was cooking. Sadly, my slow cooker was on my office floor so I had to smell it the entire day it was cooking. Needless to say, my mouth was watering…. All. Day. Long.
The rub reminded me of those rotisserie chickens you might get from your local grocery store. Since it is cooked in the slow cooker it doesn’t have the crunchy skin, but you can easily do that by putting it in a pan and baking it for a few minutes.
Make sure you print out this recipe card and put it away because this is a delicious recipe that only takes a few minutes to throw together.
- 2 tsp paprika
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp thyme
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper
- 1 whole onion
- 1 whole chicken
- other veggies
- Begin by chopping up your large onion and other vegetables and making them into a layer on the bottom of the slow cooker. In a small bowl mix together the spices. Rinse your chicken and pat it dry. Then rub all of the spices into the skin of the chicken. Place the chicken on top of the vegetable bed. Put slow cooker on low and cook for 6-8 or until the thermometer shows the chicken is done.
