Last week I got asked to make muffins for a breakfast our local FFA Chapter was putting on. I have enough over ripe bananas in my freezer to make a dozen loaves of banana bread. I decided I would tackle some Banana Cinnamon Muffins after I found this delicious recipe on th Betty Crocker website.
Betty really had something going on with these muffins. They are delicious, moist and not good on your waistband at all. Who doesn’t want melted butter with cinnamon and sugar on top? It makes everything better. Butter makes everything better. That is my life quote, now I need to make one of those Pinterest quotes with it.
Banana Cinnamon Muffins

Muffins
- 2/3 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 2/3 cup very ripe bananas
- 1 teaspoon vanilla
- 1 2/3 cup all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
Topping
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 cup melted butter
Instructions
- 1. Heat the oven to 375 degrees. Grease muffin pan in the bottoms or put in a liner.
- 2. In a medium bowl, beat sugar, oil and eggs with whisk. Stir in the bananas and vanilla. Stir in the rest of the ingredients until just moistened.
- 3. Bake 17 to 21 minutes depending on your oven. When done a toothpick should come out clean.
- 4. In a small bowl mix topping and in a separate bowl melt butter. Dip top of each muffin in melted butter, then in cinnamon-sugar mixture.

Right! I was hoping they would work out because with the blizzard there was no way I was going to be running to town for a box mix or more flour if they were crappy.
