This meal is so good! Let me tell you something, it can be a clean out your fridge and freezer kind of a meal. Before I start I will tell you how this is a clean out my fridge and freezer kind of a meal. First, use any veggies you want. I had lots of carrots and broccoli but right now I’m short on other veggies (thank you to pregnancy aversions), but you can throw in whatever you want. Peppers, onions, mushrooms, like I said whatever you want. When I make a dish with rice in it, I usually make the entire box and freeze it in 1 cup amounts. That’s what I did with the rice in this dish. It makes it so easy because I just thaw it out with my meat and my rice is ready to be thrown in with the rest of it. Finally, a flank steak works beautifully with this dish when it is sliced against the grain and chopped into small pieces. I usually use stew meat because I’m lazy and since we raise our own beef I usually have a lot of stew meat in the freezer. So, don’t be afraid to think outside of the box when it comes to the meat part.
Without any further ado, I know you will love this stir fry and so will your family. My husband loves it so much he took the big container of leftovers to work for his lunch!
- 1/2 cup dry rice or 2 cups cooked rice
- 1 tablespoon olive oil
- 8 ounces of flank or sirloin steak or stew meat
- 10 ounces broccoli florets
- 2 carrots, diced
- Sauce
- 1/3 cup reduced sodium soy sauce
- 3 tablespoons oyster sauce
- 1 tablespoon brown sugar, packed
- 1 tablespoon freshly grated ginger
- 2 cloves garlic, pressed
- 1 teaspoon sesame oil
- 1/4 teaspoon ground black pepper
- In a small bowl whisk together the sauce ingredients and set it aside.
- Cook the rice per the instructions. If your is already done like mine was, just have it ready to go in the stir fry.
- Heat the olive oil in a large skillet over medium high heat. Add beef and cook, flipping once, until browned. This is about 3-4 minutes on each side. This could depend on how big your pieces were. Set them aside on a plate.
- Stir in all of your veggies. Cook, stirring frequently, until cooked and tender. Stir in your rice, beef and sauce. Mix until well combined.
- Serve immediately.
- Really, any veggies will be delicious in this stir fry. The next time I plan on having some peppers and onions on hand to throw in there too.
