The mix of chocolate chips and mint chips make this traditional chocolate chip cookie recipe a more festive version of it. Since it’s a drop cookie it’s also easy to make and it doesn’t take a ton of time to put the badder together.
Over the past few years I have done a lot of research into making the perfect chocolate chip cookie. Growing up my dad always liked the thin, crispy cookies because he is a dedicated milk dunker. I am a soft, cakelike chocolate chip cookie lover. So, I dedicated myself to trying many recipes to finding my perfect chocolate chip cookie. This recipe is by far my favorite and by adding the mint chip pieces it has a festive holiday feel!
- 1/2 cup shortening
- 1 1/2 cups packed brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 1 8-ounce container sour cream
- 2 1/2 cups cake flour
- 1 12 ounce package chocolate chips of your preference
- 1 cup mint chips
- Preheat oven to 375 degrees. In a large bowl beat shortening on medium to medium-high for 30 seconds. Add brown sugar, baking soda, baking powder and salt. Beat until combined, scraping sides of the bowl occasionally. Beat in eggs and vanilla until combined. Beat in sour cream just until combined. Beat in as much cake flour as you can in the mixer. Stir in any remaining flour. Stir in the chips.
- Using a small scoop drop dough on cookie sheet 2 inches apart. Bake for 9-11 minutes or until edges are lightly browned. Cool on a wire rack.
