This slow cooker recipe is not only easy but delicious. My husband gave it two thumbs up, ate seconds and took the leftovers to work the next day. That’s a huge win in our house. Another win is the fact that this meal was so easy! It only dirtied two dishes in the making of it. I consider that a win as well.

Slow Cooker Pork Lo Mein

An easy, delicious meal that can replace takeout!

Ingredients
- 2 pounds boneless pork shoulder
- 1 pound bag frozen stir fry vegetables
- 1 package rice noodles
Sauce
- 1/3 cup soy sauce
- 3 cloves minced garlic
- 2 T brown sugar, packed
- 1 T oyster sauce
- 1 T fresh grated ginger
- 1 t sesame oil
Instructions
- In a small bowl whisk together the ingredients for the sauce. Put the roast in the slow cooker and pour the sauce over the roast. Cover and cook on low for 6-8 hours or high for 3-4.
- Shred the roast and put it back into the slow cooker. Add the vegetables and cook until tender, about 30-60 minutes. Cook noodles according to package directions. Drain well and toss with everything in the slow cooker. Serve immediately.
