Since I am human, I love Pecan Pie. We will not be having a pronunciation debate here because I’m from Michigan and according to everyone else I cannot pronounce anything right. If you are looking for something as decadent as Pecan Pie but has a twist, you will love this Oatmeal Pie recipe.
Oatmeal Pie is also called Poor Man’s Pecan Pie. It was actually a Depression Era recipe that came about because people couldn’t afford Pecans. I have to say, I love how easy this pie is and it’s so delicious. Also, oatmeal is a lot cheaper than pecans so there’s that. This is a perfect bake sale recipe. It’s easy, it’s cheap and it’s something different. You will be the hit. If you’re looking for bake sale recipes I can suggest this one as well.
Without any further ado, enjoy this recipe.
- 3/4 cup sugar
- 3/4 cup dark corn syrup
- 3/4 cup quick cook oatmeal
- 1/2 cup coconut
- 1/2 cup melted butter
- 2 eggs well beaten
- Mix all the ingredients together and pour the mixture into an unbaked pie shell. Preheat oven to 350 degrees Fahrenheit. Bake for 45-50 minutes. Each recipe makes one pie.
